For the last week I have been on pins and needles with excitment about my Heritage Tamworth Pork coming. It was raised about 30 miles from the restaurant near Pauline SC. I have been working with the Upstate Farmers Allince. It's a sustainable Co-op of local farmers.

I saw these hams this evening. Shaun found a great product; I can't wait to taste the difference in his already outstanding pulled pork bruschetta.

The pork bruschetta is out of this world, Shaun has made some very tasty recipes for Soby's.I can't wait to see what he comes up with next, I am sure it will be outstanding as always.
